How do I change the courses and prices?

Every question is editable — update the course options in the field editor, then adjust the matching amounts in the payment field's price map so the checkout total follows.

Can I cap enrollment when a course fills?

There is no automatic seat cap, but you can watch the response count per course in the dashboard and remove a full course's option, or unpublish the form once the term is full.
